I think the FWD is a terrible idea. I think a de-cammed motorcycle driveline would be the way to go with something like this.

These things ran poopy from the factory.
The transmissions are not interchangable. If you choose to do this you will need to take the whole trans/engine harness out of the OBD2/late model trans to go with the driveline. Not impossible, but...
1.8 16v head and 2l intermediate shaft/oil pump drive, and crank sprocket. PM me if you have any of these.

I would put 10w30 in it before you just replace the pump.
Old VWs hate thin oil.
I think the 95 has a dip stick. You just start the car and pull out the dip stick and check it. Just keep in mind that the level varies between hot and cold. Ideally you should bring it to a VW shop...
Sounds like coolant seepage into the combustion chamber to me. If you want me to get to the bottom of what is going on you need to bring the car into town.
Did you stack the head gaskets?
